Crumble of Salmon & Vegetables

This more-ish fish and green vegetables crumble is comfort at its best. Salmon, cod and smoked haddock happily swim with peas, broccoli, carrots and kale in a very light béchamel (no milk or cheese in it at all!) . This delicious combination is then topped with a crunchy and oat-y crumble. You are well positioned to reach your five-a-day in one serving with plenty of omega-3 fatty acids along the way and a very satisfied grin once you’ve polished it all off. It took me many attempts and variations to arrive to this version, and I must say this is quite one of my favourites. 

INGREDIENTS: salmon (fish), smoked haddock (fish), cod (fish), carrots, potatoes, broccoli, peas, kale, vegetable stock (contains celery), butter (cow's milk), creme fraiche (cow's milk), flour (gluten), oat, whole wheat breadcrumb (gluten, sesame seeds, soya flour, barley flour), cheddar cheese (cow's milk), black pepper.

Daube Provencale With Tender Roots

Daube is a classic stew from my native Provence, made with beef, vegetables, herbes de Provence (thyme, rosemary and marjoram that grows in the wild out there in what we call the "garrigue") and usually a strongly flavoured local wine (such as a Gigondas or Vacqueyras for the connaisseurs). After many trials and errors, this alcohol-free version tastes almost as amazing as its original version. First marinated for hours and then braised for a very, very, very, very long time, we definitely have the taken the work out of your kitchen for this. Everyone, young and old, will melt for it in this cold season.

INGREDIENTS: beef, carrots, parsnips, potatoes, tomatoes, turkey rashers, onions, garlic, beef stock, black olive tapenade, balsamic vinegar, orange zest, tomato puree, herbes de Provence, wheat flour (gluten), black pepper, olive oil.

Root Vegetable & Chicken Stew

Ragout de Poulet et Legumes a l'Ancienne would be its original title, in French in the text. And it has been one of my favourite meal in winter ever since I was a little wee one. I have off course updated it to make it lighter and packed with all the root vegetables that make the harvest of our British countryside in winter. You will find the fragrance of Provence throughout this meal, the softness of those beautiful vegetables and the juiciness of chicken thighs nicely skinned and chopped for you. Just what you need for a healthy and cosy night in!

INGREDIENTS: chicken, parsnips, potatoes, carrots, butternut, turnips, leeks, onions, chicken stock, bacon, butter (cow's milk), wheat flour (gluten), herbs, bouquet garni,  black pepper, olive oil.

A mildly spiced, flavourful curry that will get you very close to your 5-a-day in one bowl. Great for Meat-Free Mondays or any other days of the wee.

All Plant Lentils Bolognese

I promise you will not miss the meat in this delicious, deeply-flavoured all-plant version of the traditional Bolognese stew. It is all due to a little secret cooking process that give alls the ingredients the best of their flavours. We serve it with brown rice for a change and you are free to add a little parmesan on top if you fancy. Difficult to make it tastier, healthier and more energy boosting. 

INGREDIENTS: Puy lentils, brown rice, carrots, courgettes, red peppers, mushrooms, tomatoes, smoked tofu (soya), celery, tomato puree, red onions, vegetable stock (celery), garlic, oregano, olive oil, black pepper.

Veg Packed Beef Lasagna

Everyone loves comfort food but I often feels it is wasted if not loaded with goodness. Hence why I created this veg-packed healthful version of Beef Bolognese Lasagna. The pasta are organic and from wholegrain spelt. The vegetable content surpasses everything else with carrots, courgettes, spinach (hidden in the white sauce, which turns is green) and off course tomatoes (lots of them!). The white sauce is also much lighter as made with oat milk, while hiding the spinach "powder" in it. Everyone will love this twist on a traditional dish that makes comfort and yumminess rhyme with wholesome goodness.

INGREDIENTS:  Tomatoes, carrots, courgettes, wholewheat spelt pasta(contains gluten), spinach, beef, chicken stock, tomato paste, wheat flour(gluten), butter (cow's milk), oat drink (oat, water, salt), smoked turkey, onions, garlic, bicarbonate of soda, oregano, thyme, rosemary, olive oil, black pepper, salt (just a little to enhance the flavours).

Vegan Chocolate Cream: FAMILY SIZE

This vegan version of our best selling chocolate cream, may be dairy free but loses none of its sumptuous, creamy-ness. Lightly sweetened with agave syrup, it is absolutely jampacked with antioxidants from our 100% dark cacoa. With no refined ingredients this is what we like to call a healthy treat!

This cream can be enjoyed straight from the jar as a dessert or used as a spread on toast as a Nutella alternative. 

In our home these little pots are devoured by children and adults alike!

Ideal for those with sensitive tummies or dairy allergies.

Scrumptious Chocolate Cream: FAMILY SIZE

Here we present a tasty introduction to the bitter taste of chocolate, without entering the way too sweet realm of what is usually available on the market. Children ought to learn to love "real" chocolate, so rich in antioxidants and not the sugar that usually alienate its unique taste. With this delicious chocolate cream, I bring you many memories of my childhood...this was my family's favourite desert and we all enjoyed it thoroughly at the end of some of our meals! I had to experiment a lot to succeed in reproducing its flavour and texture without using any refined sugar at all (we use agave) but still balance the intensity of pure dark cocoa powder (100% cocoa). 

INGREDIENTS: Pure Dark cocoa Powder (30%), Cornflour (15%), Agave Sugar (15%), Milk (40% - contains Cow's Milk)

Pick Me Up Cookies

Those cookies are perfect for busy mums in needs of a little "pick me up" and energy, little ones after an outing in the park, older ones after school, helpful dads who stand by the pitch whatever the weather.

INGREDIENTS: Oat, flour (contains gluten), flaxseed, brewer's yeast, bicarbonate of soda, baking powder, salt, coconut oil, butter (contains milk), sugar, eggs, vanilla extract.

Not Your Ordinary Hot Chocolate

I found this magic chocolatey hot drink recipe in my grand-mother's 1958 cookbook under the name of Racahout. Together with 100% cacao powder, we added pre-cooked barley, oat, rice, azuki and quinoa flours and zero sugar as we've sweetened it with just the right amount of xylitol. Like this you have a nice hot chocolate the way every little ones love them, without the sugar but tons of filling proteins instead. Perfect for those who don't manage to eat anything for breakfast. Splendid to replace the usually sugar-loaded and nutrient poor commercial alternatives.

Ingredients: 100% cacao powder, barley flour (contains gluten), oat flour, kokkoh flour (rice, quinoa and azuki flour), xylitol. 

Instructions for use: Pour one heaped teaspoon of the powder at the bottom of bowl or mug. Add a bit of boiling water and stir to dissolve the flours. Fill up with your favourite hot milk or dairy free alternative.

Keep in airtight container for up to 3 months.
